Roasted Brussels Sprouts: 3 Ways

When I am entertaining family and friends I love to introduce new recipes and ingredients to them. Brussels sprouts are not new to most people, but most turn their noses up when they hear they are on the menu. Below are three roasted Brussels sprout recipes that just might change your mind about these little bulbs of deliciousness.
Brussels Sprout Ingredients:

1 pound Brussels sprouts, trimmed and quartered lengthwise
2 tablespoons olive oil
Pinch of salt (optional)
Pinch of ground black pepper

Tools:
Cutting board
Knife
Large baking sheet 
Brussels Sprout Directions:
  1. Preheat oven to 400°
  2. Toss Brussels sprouts with olive oil, salt (optional), and pepper and place on a baking sheet 
  3. Place in the middle oven rack and roast; occasionally toss
  4. Roast for approximately 25-30 minutes or until deep golden brown, tender on the inside and crisp on the outside
Garlic Parmesan Brussels Sprouts

Directions:
  1. See Brussels Sprout Directions above and add garlic
  2. 5 minutes before removing from oven add pine nuts
  3. Stir well and continue roasting until Brussels sprouts are tender.  
  4. Before serving, toss with Parmesan cheese (optional)
  5. Serve ½ cup per person   


Additional Ingredients:

1 tablespoon minced garlic
¼ cup grated parmesan cheese (optional)

For the weary vegetable eater: BLEND cooked vegetables then mix them into dishes like:
-Tomato sauce (broccoli, zucchini, squash, carrots)
-Mashed potatoes (squash, cauliflower)
-Soups (squash, cauliflower, broccoli, zucchini, carrots)

Fall Mushroom Pea Risotto

Risotto is a delicious comfort food and is usually made with lots of cream and butter. HealthKitchen has created a risotto recipe that tastes just as good, but cuts out all the unnecessary extras. We hope you have a chance to try this recipe.
TIP: Learn how to make your own vegetable stock...
Ingredients:
2 tablespoons olive oil
1 cup arborio rice
3-4 cups vegetable broth
1/2 medium yellow chopped onion
1 cup frozen or fresh peas
2 cups sliced button mushrooms
1/2 teaspoon dried sage
1 clove of minced garlic
1/4 cup Parmesan cheese (optional)
salt to taste
Tools:
medium pot
wooden spoon
cutting board
knife
small pan
small pot
Directions:
  1. In a small pot bring vegetable stock to a boil, then turn down to a simmer
  2. Over medium heat place olive oil and onions in medium pot and sauté until soft
  3. Mix rice and onions together for 1 minute
  4. Add 1 cup of the hot vegetable stock and continuously stir as the liquid evaporates
  5. Once the vegetable stock has evaporated, add peas and slowly add a small amount of stock and  stir
  6. Repeat this process of adding stock and then allowing it to evaporate until the rice has cooked through, about 20-25 minutes
  7. The rice should become thick over time and more difficult to stir
  8. As you are cooking the risotto place olive oil and garlic in a small pan and sauté
  9. Add mushrooms, sage, and salt in pan and sauté mushrooms until browned
  10. Once the rice is cooked fold parmesan cheese (optional) into rice before serving
  11. Place 1/3-1/2 cup of risotto on each plate and serve a generous amount of mushrooms on top
  12. Enjoy!!!

We feel confident that the recipes HealthKitchen provides are healthy and delicious! There is such diversity in the ingredients of each meal that we get to learn something new in every recipe. Save at the grocery store: HomeMade Vegetable Stock

Vegetable stock is a great way to enhance a recipe. Many of HealthKitchen's recipes suggest vegetable or chicken stock in place of water. Making your own stock is very easy and uses the remains of vegetable parts that we typically throw away or compost. 

As you try HealthKitchen's recipes keep the remains of the vegetables that you would normally discard. Throw them into a large plastic tupperware or bag and place them in the freezer. Use the remains of celery, bell peppers, carrots, onions, onion peels, garlic peels, bok choy, broccoli, kale stems, green bean ends, etc for your stock.

Remove your pot from the heat and allow to cool. Once it is cool, strain the vegetable remains out and place 2 cups of stock into individual 2 cup containers. Then place your broth in the freezer and take one out when you need it.

After you have filled the tupperware with vegetable remains take a large soup pot, fill it with 7-8 cups of water and turn the heat up to high. Place your vegetable remains in the pot and bring to a boil. Once the water is at a boil turn to a simmer and let the vegetables break down and flavor the water. Cover and simmer the stock for 1 hour.

Making your own stock will save you money at the grocery store and use the ends of the vegetables that typically get thrown away. Next time you use one of  HealthKitchen's menus incorporate some of your own vegetable stock into one of the recipes.
