It is Halloween! 
While the kids are knocking on your door step for tricks and treats you can make your own, Healthy Chia Walnut Pumpkin Muffins. HealthKitchen has used whole wheat flour, natural sweeteners, added healthy chia seeds, walnuts, and cinnamon to this recipe. These muffins won't be as sweet as the treats you'll be handing out to the kids, but they sure will taste delicious with some hot tea. We hope you have a safe Halloween.

What is HealthKitchen?

HealthKitchen evolved while I was living in NYC, running a small business training and coaching health and wellness clients. During this time, I noticed many of my clients struggling to eat healthy home cooked meals. It was a common occurrence for my clients to be very busy, over scheduled, and exhausted after a long day of work; leaving very little time or interest in making dinner.

"HealthKitchen's mission is to assist people in reaching their health potential through quality whole foods plant based cooking, meal planning, and cooking coaching online and in-person".
As someone who tries to follow the same advice I give my clients, I attempted to make dinner 5 nights a week. Fridays and Saturdays my husband and I typically went out, but for those other 5 nights, I worked hard to feed us with wholesome and healthy meals. 

My husband and I lived in an area of Brooklyn that had very few good grocery stores. So every Sunday, I would make a menu list for the week with all the recipes and ingredients I needed.

Then my husband and I would hit the pavement and lug heavy bags of groceries home. After the grocery store adventure, I thankfully had all the ingredients I needed. Each workday evening, I opened up my fridge and made the recipes I had planned out the weekend before. It cut down on the daily time and planning and sped up my cooking process. My new system made perfect sense! I had come up with a quick and easy way of eating at home, that I now call The HK Way.
