3 ways to make delicious Brussels Sprouts

Roasted Brussels Sprouts: 3 Ways

When I am entertaining family and friends I love to introduce new recipes and ingredients to them. Brussels sprouts are not new to most people, but most turn their noses up when they hear they are on the menu. Below are three roasted Brussels sprout recipes that just might change your mind about these little bulbs of deliciousness.
Brussels Sprout Ingredients:

1 pound Brussels sprouts, trimmed and quartered lengthwise
2 tablespoons olive oil
Pinch of salt (optional)
Pinch of ground black pepper

Tools:
Cutting board
Knife
Large baking sheet 
Brussels Sprout Directions:
  1. Preheat oven to 400°
  2. Toss Brussels sprouts with olive oil, salt (optional), and pepper and place on a baking sheet 
  3. Place in the middle oven rack and roast; occasionally toss
  4. Roast for approximately 25-30 minutes or until deep golden brown, tender on the inside and crisp on the outside
Garlic Parmesan Brussels Sprouts

Directions:
  1. See Brussels Sprout Directions above and add garlic
  2. 5 minutes before removing from oven add pine nuts
  3. Stir well and continue roasting until Brussels sprouts are tender.  
  4. Before serving, toss with Parmesan cheese (optional)
  5. Serve ½ cup per person   


Additional Ingredients:

1 tablespoon minced garlic
¼ cup grated parmesan cheese (optional)

Cranberry Pecan Brussels Sprouts

Additional Ingredients:

1 cup unsweetened dried cranberries
1/3 cup pecans

Directions:
  1. See Brussels Sprout Directions above
  2. 5 minutes before removing from oven add cranberries and pecans
  3. Stir well and continue roasting until Brussels sprouts are tender
  4. Serve ½ cup per person            
Brussels Sprouts and Arugula Salad            
Additional Ingredients:
4 cups arugula
¼ cup goat cheese (optional)
3 tablespoons olive oil
2 tablespoons balsamic vinegar

Directions:
  1. See Brussels Sprout Directions above
  2. After roasting, allow Brussels to cool to room temperature
  3. Toss with arugula, goat cheese, olive oil, and balsamic vinegar
  4. Serve 1 cup per person
